Abstrak

Jamu is a traditional medicine made from natural cultural heritage that has been passed
down from generation to generation for health, made from plants. Jamu itself is believed
to have significant benefits for health, both for the prevention and treatment of a disease
and in terms of maintaining fitness and beauty and increasing body stamina. However,
not all people like to consume Jamu, especially young consumers because the taste and
aroma tend to be bitter. This study aims to develop Jamu into a food that is more in
demand by young consumers, namely ice cream. The method used is to test several basic
ingredients of jamu such as beras kencur, turmeric, ginger, and the most suitable to be
innovated into ice cream. The results of the study showed that Jamu which was developed
into ice cream was more suitable for young consumers compared to Jamu itself. This
development proves that innovating Jamu into ice cream can be a means of preserving
jamu for the younger generation.
